The making of traditional biscuits

It was in 1920, at Jerusalem Square in Avignon, that M. Aujoras made his croquettes for the first time using his famous recipe. Half a century later in 1971, Jean Vial founded the Aujoras Croquettes Company with his son Jean-Claude. Today, the company is directed by Stéphane Vial, Jean-Claude's son and Jean's grandson, himself a confectioner and chocolate maker. Thus it is that today, the Aujoras croquettes and biscuit tradition is perpetuated by the third generation of the Vial family.

All the biscuits are made in a traditional way. During your visit you will be able to see the making of croquettes, navettes, macaroons, aniseed biscuits and other varieties which have made the Croquettes Aujoras famous. At the end of the visit you will be invited to taste these products as they come out of the oven.
